I will admit that I am a little jealous of Boise. That may have something to do with the fact that they have something that I want here in the Magic Valley: a mac and cheese food truck.

I don't care which option you pick cause it means I end up with mac and cheese on demand.

Only In Your State recently documented this wonderful idea in one of their blogs. I think the word "dreamy" was used. Or, maybe I imagined it.

Their Southern Comfort mac and cheese bowl has yellow corn and bacon in it. Yes, I said bacon. There's even one that includes BBQ sauce. Yes, I said BBQ sauce. That's not even playing fair.

Here's the rub: Boise is on every freaking "best place to do this or that" list in the world. Why should they be allowed to have mac and cheese in truck form available to anyone that wants it? They shouldn't and that's a conviction I will stand by.

So, we need a mac and cheese food truck in the Magic Valley. I'm a radio guy, so that means I have no money. No worries. I've done research on how YOU can finance your own mac and cheese food truck. Mobile Cuisine has some great tips on how you can make it happen. In summary, they say to do the following:

  • Have a bank give you money and you pay it back
  • You ask people to donate to your cause in a crowd-funding effort
  • You are rich and don't need other people's money
