The weather can be a factor in a person's mood regarding the types of foods we crave. The colder the weather, the more we crave stews, chilis, casseroles, and other kinds of comfort foods.
The potato reigns supreme in the Gem State, and is a versatile ingredient that can be used to create a variety of dishes. Personally, I eat them multiple times a week. Diced, seasoned potatoes are one of my favorite things to eat; pouring chili over them is as good as it gets for me.
I recently discovered an incredible cold weather recipe that will feed a family for under $50, is filling, surprisingly healthy, and features the beloved spud as the star of the show.

I've seen the dish get prepared a couple different ways, but the one that's the easiest to follow and produces the best results came from the YouTube channel of Cooking with Tammy. She has over 740,000 subscribers.

The most costly ingredient in the dish is the pound of beef; turkey makes for a less expensive, healthier choice and tastes great in the dish.
Again, this meal is best for people that enjoy hearty foods in the colder months. Any dish that has potatoes, cheese, and chili in it is a winner in my book.
